I Like My Beets Bloody

The dehydrator was going all day today. More zucchini and tomatoes. I also decided to try beets this time. They didn’t really sweeten up the same way other fruits and veggies do when the moisture content is reduced. I had simply sliced them and spread them out on the dehydrator trays. Next time, I may try tossing them in a wee bit of olive oil before drying.

The beets were sliced on my (relatively) new mandoline. It was my third time using it and probably my last. I’d sooner slice my veggies with a chainsaw. I haven’t lost a finger yet, but whenever I look at the shiny stainless steel tool, it ain’t smiling back. I get the sweats just taking it out of the drawer.
