My favourite basic fish recipe.
Broiled Trout
- 1 lb trout fillets
- 1/4 cup butter
- 1/4 cup lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- salt and pepper to taste
Preheat broiler. Brush a baking pan or dish with oil. Place the fish in the pan in a single layer. Mix remaining ingredients in a glass jar and shake well. Pour over fish. Broil 15 minutes, basting once or twice. Fish will flake easily when cooked. Serve with brown basmati rice and a green vegetable or salad.
Try replacing the butter, lemon juice and paprika with coconut oil, lime juice and curry (and a dash of cayenne, if you like). This recipe lends itself to many different flavour combinations. Have fun.
